Lemon Meringue Pie

Image
Here is one from Paula - Lemon Meringue Pie : Lemons are one of the most versatile fruits on earth. From cleaning to cooking, this is one item I try never to run out of. There are several options to making this pie. You can buy canned Lemon Pie filling and a prepared pie crust, purchased at the market, and just add the meringue topping. This is the easy, cheat way to make it. You can semi-cheat and use the prepared pie crust and make the filling and meringue and it would be less cheating and you will be pleased with the outcome. Or… you could make the entire pie from scratch and be the envy of your guests for such a terrific dessert. Either way, you will enjoy it. Lemon Meringue Pie Using the Pie Crust Recipe I submitted previously, prepare the crust and bake it. ( This recipe for pie crust can be found by clicking here. ) Once you have the Pie Crust Recipe...here is for the rest of the Lemon Meringue Pie . Utensils you will need: Two Large Bowls 1 Medium sauce pan Whisk Ingredien...

No-Bake Non-Dairy Raspberry Pie

Paula thinks we are going to give her a one-star here for difficulty...shhh...let us see how well she did with this recipe. She also gives us a personal view of her insane kitchen and cooking methods. Well here is what the insane cook sent Help! I Have A Fire In My Kitchen this time and once again we enter our Pie Fight! Paula Writes: Kids In The Kitchen While I’m packing up my kitchen for the upcoming move, I have come across many things that made me smile at the memories. I have 1 daughter, 12 nephews, 1 niece, 2 great nephews and a great niece. I won’t bore you with all of them, but I wish to share just a few special stories. A few things to keep in mind when allowing your children to help in the kitchen. 1) There will be a much larger mess to clean up in the end, but the bonding will more than make up for it. 2) You will be giving your child/children skills to survive on as they grow 3) You will create some very interesting dishes and feel giddy when you actually like them 4) T...

Pistachio Cheesecake (or Pie)

Image
Beth Writes: I was fiddling around in the kitchen again, Teddy. Below is what I came up with. It’s a thick cheesecake, but not too rich. Perfect for summer, as well as being a lovely light green color for spring celebrations. (And the reason this isn't for the contest is... My cheesecakes tend to be more like a pie than strictly a cake. They're smooth and creamy and a bit too wet to be called a cake. Plus, my life is so much easier if I just use a pie pan, than try to locate and use a cheesecake pan.) Pistachio Cheesecake Cooking Utensils Required: Electric Mixer Large Bowl Rubber Spatula Measuring Spoons Measuring Cup (preferably glass notated for liquid measurements) Ingredients: 1 pre-made 9” graham cracker crust 2 8oz packages cream cheese (softened to room temperature) 5 Tablespoons sugar ¾ cup of whipping cream (NOT pre-made whipped cream) 2 eggs 1 Tablespoon lemon juice 1 package pistachio pudding mix 1 tub of pre-made whipped cream (optional) Directions: Preheat...

No-Bake Chocolate "Mousse" Pie

Image
Kali submitted another one. This time a PIE! (Paula WATCH OUT!) I'm glad you liked the beef and cabbage soup recipe. A lot of my recipes definitely are not kosher, I like ham and I like cream of something soups with some of my meat dishes. But I noticed you don't have very many pie recipes, so I thought you might like this one. It's definitely dairy. About 30 odd years ago my grandmother attended a luncheon where the hostess served a very light and delicious chocolate pie for dessert. Helen was happy to share the recipe... no baking and only three (3) ingredients!! now how simple can you get?!? I was living with my grandparents at the time, so a few days later Grandmom and I decided to make the pie. Oh dear!! We ended up with chocolate soup pie! Fortunately, a few hours in the freezer got the "soup" to "set", but although it tasted just fine, it was missing the light texture it was meant to have. I realized that one rather key step had been omi...

Chicken Pot Pie

Image
Chicken Pot Pie from Paula, The Insane Cook This can be made with the Pie Crust Recipe I sent prior to this - Fruit Pies (Apple Pie) . You can substitute or add veggies to your liking. I add spinach and broccoli. Made ahead they freeze well. I know you will give this a difficulty rating of at least 4, but this is so worth the time and effort. (Paula read my mind cause it is a 4!) Chicken Pot Pie Make the pie crust first. Ingredients: Chicken & Stock Ingredients: 3 ½ lb Frying Chicken 1 Carrot 1 Celery Stalk 1 Small Onion ,halved 2 Teaspoons Salt Filling: 6 Tablespoons Margarine 1 Large Onion , diced 3 Carrots, sliced thin diagonally ½ Cup Flour 1 ½ Soy milk may be used ( real milk in a kosher recipe of meat is a no-no! ) 1 Teaspoon Fresh Thyme leaves ¼ Cup Dry Sherry ¾ Cup Green Peas (Fresh works best. Frozen tend to get mushy) 2 Tablespoons Fresh Parsley 2 Teaspoons Salt ( I use Celery Salt) 1 Teaspoon Black Pepper Egg ( to wash crust) To make Stock Combine Chicken, carrots, ce...

Fruit Pies (Apple Pie)

Fruit Pies A Basic Pie Crust recipe for a 2 crust pie from Guess Who? - Paula Our Insane Cook Keeps On Rolling! She Writes: This is a basic 2 crust recipe. Sometimes dough does not cooperate while being rolled out and will frustrate you. Instead of using excessive amounts of flour, place waxed paper on the surface you will use to roll the dough on and place another over the dough. You can roll it using this method fairly easy and it will not stick to the surface. Ingredients: Pie Crust: 2 Cups Flour ½ Teaspoon Salt ½ Teaspoon Baking Powder 1/8 Cup Sugar ¾ Cup Shortening 10 Tablespoons of Very Cold Water ( I place in a small bowl with water and place a few Ice Cubes in it) - You may not use all of the water . Directions for Pie Crust: In a large bowl, mix Flour and Salt with a spoon Using a fork, work in shortening Add enough cold water to make the dough stiff without becoming sticky. Try a few teaspoons at a time you may end up using only 5 -7 tablespoons. Now dig in with your fre...
