Key Lime Pie
This is one from Paula, also sitting in the queue for quite some time. I love the addition of Rum in this pie:

Gets a four star for difficulty. Baking, separate egg whites and pie...all of these require good dexterity in the kitchen. But a fantastic and refreshing pie, that is for sure.
Key Lime Pie
Ingredients:
- 1 1/3 Cups Crushed Vanilla flavored wafer cookies
- 1/3 Cup Toasted Coconut Flakes
- ¼ Cup Melted Butter
- 1 Teaspoon Rum ( or Rum Extract)
- 2 Eggs Separated (reserve the whites)
- 1 (14oz) can Sweetened Condensed Milk
- ½ Cup Key Lime Juice ( or Lime Juice)
- ¼ Cup Sugar
- Fresh Mint Sprigs (in Israel and Middle East you can try "nana" instead)
You will need:
- 9 inch pie plate
- 2 small bowls
- 1 large bowl
- Electric mixer
- In small bowl combine crushed vanilla wafer cookies and coconut
- Stir together butter and Rum
- Add to crumb mixture
- Toss together to coat crumbs
- Press crumb mixture into slightly greased pie plate
- Bake on 350 degree oven , for 5 minutes
- Set aside
- In large bowl, whisk together egg yolks, sweetened condensed milk, lime juice and 2 tablespoons of sugar, until combined
- In small bowl, beat egg whites on high speed until foamy, Gradually adding remaining sugar, Beat until peaks form
- Fold egg white mixture into lime juice mixture
- Pour into crust
- Bake for 20-25 minutes in a 350 degree oven
- Cool for an hour
- Place in refrigerator for 2-3 hours
- Garnish with Mint Sprig for serving
