Key Lime Pie

This is one from Paula, also sitting in the queue for quite some time. I love the addition of Rum in this pie:

Key Lime Pie



Ingredients:
  1. 1 1/3 Cups Crushed Vanilla flavored wafer cookies
  2. 1/3 Cup Toasted Coconut Flakes
  3. ¼ Cup Melted Butter
  4. 1 Teaspoon Rum ( or Rum Extract)
  5. 2 Eggs Separated (reserve the whites)
  6. 1 (14oz) can Sweetened Condensed Milk
  7. ½ Cup Key Lime Juice ( or Lime Juice)
  8. ¼ Cup Sugar
  9. Fresh Mint Sprigs (in Israel and Middle East you can try "nana" instead)

You will need:
  1. 9 inch pie plate
  2. 2 small bowls
  3. 1 large bowl
  4. Electric mixer
Directions:
  1. In small bowl combine crushed vanilla wafer cookies and coconut
  2. Stir together butter and Rum
  3. Add to crumb mixture
  4. Toss together to coat crumbs
  5. Press crumb mixture into slightly greased pie plate
  6. Bake on 350 degree oven , for 5 minutes
  7. Set aside
  8. In large bowl, whisk together egg yolks, sweetened condensed milk, lime juice and 2 tablespoons of sugar, until combined
  9. In small bowl, beat egg whites on high speed until foamy, Gradually adding remaining sugar, Beat until peaks form
  10. Fold egg white mixture into lime juice mixture
  11. Pour into crust
  12. Bake for 20-25 minutes in a 350 degree oven
  13. Cool for an hour
  14. Place in refrigerator for 2-3 hours
  15. Garnish with Mint Sprig for serving

Gets a four star for difficulty. Baking, separate egg whites and pie...all of these require good dexterity in the kitchen. But a fantastic and refreshing pie, that is for sure.
