Italian Meatballs Kosher Style

The following recipe was placed in one of the comments by Catherine Manna. It is good, though you really have to deal with Catherine's refusal to measure out spices (I have tried to help a bit in that area.) She made it a great effort to keep this one kosher, however in her original submission she said she either used ground beef or buffalo meat... so we have to nix the buffalo! (ETA: Thanks to the comment by Juggling Frogs in this recipe, buffalo meat is bison meat, and thus it is kosher. So no need to nix the buffalo!) I worked on the ingredients for approximately 2 pounds of ground beef. I left the directions alone, basically in Catherine's own format. She writes: I never measure anything, but it always turns out great!, {ok, 99 percent of the time!} First you need the right ingredients...Kosher that is.. Note: Since I'm Italian i had to learn the Kosher ways, and one of the cheeses which you wouldn't use in this meal anyways, is that some cheeses has renet in it....

Yom Kippur, the long fast day is almost upon us. As it is a commandment to fast on Yom Kippur (the fast goes from sunset till the end of the following day when night arrives), so to, it is considered a commandment to eat the day before Yom Kippur. In Israel, from 2 PM on the eve of Yom Kippur, all radio and TV stops, there is no public transportation, Ben Gurion airport shuts down - and the country begins preparations for the holiest day of the year. Before Yom Kippur, we sit down for what is known in Hebrew, as a "Seudah Maphseket". This literally means the "meal which stops" or "the meal which divides". As readers of Help! One really great thing about our insane cook Paula. She notices when I am busy elsewhere and sends in recipes for all of us to enjoy. For this I thank her. So I put this one out for you guys. Be warned though. I am going to be doing a few recipes and pieces on really CHEAP & EASY dishes, due to some email that I have received. So if any of you out there have any... SEND THEM IN! Tzimmes (Jewish Casserole or Stew)

The following hit my email, and of course the first thing I say is "Oy Vey!". Subject: A Request Ted, there is recipe I'd love to find. During one of the memorable dinners at my college roommate's home, her Mom served a side dish called (I think) Carrot and Apple Tzimmes (sp?). I know this dish was sweet and had apples and carrots in it, but I've not found a recipe that sounds like the same thing I had at the Gonchar's house, and sadly my friend and her parents have passed away, so the recipe has been lost forever to me. Here's your challenge: come up with a recipe that is an equivalent or a close one to it and I'll give you my eternal gratitude and a gold star for cleverness and know-how. In my recent post, Honey-Garlic Chicken With A Few Other Tidbits , I told readers of Help! I Have A Fire In My Kitchen the story of the almost-not-done chicken on Friday. What I did not mention is that in the morning I made two dairy dishes. I was kind of stupid. I did not think of taking pictures of the Mac & Cheese one, (which I should have - cause it came out SO PERFECT...sheesh!) but I did think of taking a picture of my potato madness Quiche. Now this is not really a Quiche... so I am cheating... pfffffttttt. Hell, it kind of looks like Quiche! So I am taking a literary license on this one! It is actually almost the exact the same recipe as the one I gave in, Mr. Potato Head - The Good Ole' Potato Recipe , but it is worth its own post, me thinks. A new commenter appeared today and posted a recipe for Macaroni & Cheese in the recent entry of the recipe by our insane cook Paula, for Macaroni & Cheese . I posted that comment of course, but I am going to put the comment here in full as yet another recipe for Macaroni & Cheese. Paula sent in this incredibly simple recipe for Macaroni & Cheese . Ingredients: 4 cups Elbow Macaroni (cook according to package directions) 2 cups grated cheddar cheese 3 eggs, beaten 1/2 cup sour cream 4 Tablespoons butter, cut into pieces 1 cup milk Directions: Preheat oven to 350 degrees F. Once you have the macaroni cooked and drained, place in a large bowl and, while still hot, add the Cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired. Simple. One star for difficulty. One thing I would add here. Lightly cover the bottom of the baking bowl with just a touch of Olive Oil. Macaroni & Cheese is a very well liked dish in our house. Potato and Jalapeno Casserole Recipe

Paula has been real busy in her kitchen.. so we are going to devote a few posts to the recipes building up. She writes for this one: This is a great side dish and it's easy. Potato and Jalapeño Casserole Recipe Ingredients: 8 Potatoes 3 Onions Canola Oil for frying 6 Jalapeño peppers, thinly sliced 1 pound Monterey jack cheese, shredded Salt and pepper to taste Directions: Peel and slice potatoes and onions. Fry potatoes in oil in fry pan just until tender; drain. Alternate layers of potatoes, onions, jalapenos, cheese, salt & pepper in a 9 x 13-inch casserole dish. Bake at 300 degrees for 30 minutes Frying and baking gives this a two star in terms of difficulty, but this is really simply and a great casserole. Help!
