Nana Cecelia's Harvard Beets

This is a new one on me. Barbara over at " Barbara's Tchatzkahs " who recently sent in the recipe Muffin Meatloaf And Potatoes a la Barbara , now gives us a recipe from the "old country" and her grandmother. Here is what she writes: Today I was digging through more boxes from parents which I had in storage. My mother passed 7 years ago and I knew she had my some of Nana's recipes in her things somewhere. My Nana, of blessed memory, was one of the best cooks I have ever known. The oldest of 13 children and the daughter of 2 immigrants who ran from the Pogroms in Poland, she could make a gourmet meal out of a crust of bread and a carrot! Well, almost. And I found some of them!! Many of them are for baked goods (will share later) but I found her recipe for Harvard Beets in my Nana's handwriting. Vegetable Egg Rolls (Revisited)

This recipe was submitted to Help! I Have A Fire In My Kitchen before, but now pictures of the dish have been sent along to show off the dish as well. Vegetable Egg Rolls (Before Cooking) Ingredients: 2 Cups Shredded Red Cabbage 1 Cup Shredded Green Cabbage 1 Cup Shredded Carrots 2 Cups Chopped Bean Sprouts 4 Chopped Scallions 2 Thinly sliced Red Peppers 2 Tablespoons Sugar 1/2 Cup Low Sodium Soy Sauce 1 Package Egg Roll Wraps ( 20 per package) 2 Teaspoons Olive Oil Canola oil for frying Directions: Heat olive oil in skillet or fryer with deep sides Add both Cabbages, Carrots, Bean Sprouts, Scallions and Peppers Stir Let saute for 5 minutes Add soy sauce and stir Add sugar and stir Lower heat to low and cover for 5 minutes, stirring often Drain off juice Use 1/3 Cup of mixture in each Egg Roll wrap Place mixture in the middle of Egg Roll wrap, fold bottom up , then sides over and roll Using a pastry brush, moisten edge of Egg Roll wrap to hold in place. Pumpkin Bread

With Thanksgiving almost upon us - here is a recipe for Pumpkin Bread from Paula. Ingredients: 2 Cups of Pumpkin 2 Cups Flour 2/3 Cup Brown Sugar 2 Teaspoons Baking Powder 1 Teaspoons Baking Soda 2 Teaspoons Cinnamon 1 Teaspoon Nutmeg 4 Eggs ( I use Jumbo) 1 Cup Canola Oil You will need: 1 Large Bowl 1 Small bowl 1 Whisk Either 2 Loaf pans or 1 Cake pan, or 1 Bundt Pan Directions: In a small bowl , mix Flour, Sugar, Baking Soda, Baking Powder and Cinnamon until blended. In large bowl, whisk eggs and pumpkin together until blended Add in oil and whisk until smooth Gradually add flour mixture and whisk until blended. Pour into greased pan(s) and bake at 350 degrees for 45 - 55 minutes Variations: Add 1 Cup of Nuts Add 1 Cup of Raisins Serve with Fresh whipped cream Dust top with Powdered Sugar Not difficult to make and promises to be a hit at any Thanksgiving Meal. Apple Turnovers

Today we have a real special treat from Paula. I moved this up the queue simply because it is just delicious. She writes: This weekend I spent canning. I put up 75 jars of sweet pepper relish. It seems everyone with a garden felt the need to provide me with their green tomatoes. Of couse they will all receive a jar or two of relish. When all the green tomatoes were used, I was left with some red ones and decided , what the heck, may as well jar some marinara sauce. I should have closed my eyes and crawled from the kitchen but I realized, I still have apples needing to be cooked in some form. I think my family is tired of pies and cakes now so it’s on to apple turnovers. When I finished, all that was needed is someone to clean my kitchen. The floor is sticky, there are remnants of apples, tomatoes, peppers and such. With this recipe Paula shares some of those great moments with the family as well as a great Apple Cake: Each year, I gather my sisters, their children and their grandchildren and head to the orchards. We spend the day picking apples, taking hayrides and finish with a picnic lunch. Having a large family means there is usually a new baby joining us for the first time. This year, my niece Keira got to taste her first apple, picked fresh from the tree. I buy 3-4 bags (about 30 pounds) of apples. I finish the day by peeling and coring apples for pies, cakes, applesauce and turnovers. My sisters leave the orchard with a small bag of apples and a pie they purchase from the farm. This arrived just in time for then Jewish New Year. As I mentioned before, ( Apple, Honey and Cinnamon Chicken ) on Rosh HaShanah we traditionally eat food with honey, to symbolize our hope for a new sweet year. Here Paula writes about the recipe: Not even an egg to break, sheesh. Yes, I know it calls for baking.. but honestly, baking does not get any easier than this…. This recipe, sent in by our Insane Cook, Paula , has been sitting in my in-box for quite awhile. Time to publish it. I am not sure why Paula lists Arborio rice , specifically, but keep this in mind. Perhaps because it is a medium grain. Rice Pudding Ingredients: 2 cups water 1 cup Arborio rice 3 cups vanilla soy milk 1/4 cup sugar 1 cinnamon stick 1/2 teaspoon vanilla extract 1/2 teaspoon ground cinnamon, plus more for dusting 1/4 teaspoon ground nutmeg Arborio Rice: Variations: Add Fresh Berries Add Whipped topping You will need: 1 Large bowl 1 Medium sized, ovenproof, saucepan Whisk Directions: Preheat the oven to 375 degrees F. Bring the water to a boil in a medium sized, heavy, oven-proof saucepan. Add the rice, cover, and simmer for 20 minutes, until rice is nearly cooked. In a large bowl, whisk the soy-milk and sugar. Paula has gone insane over cookies: Seeing as though cookies are my favorite, I thought I’d send this one in. Ginger is a natural way to settle a queasy tummy, perhaps not in the form of a cookie, but good to know none the less. Ginger Cookies Ingredients: 1 Cup Sugar 1 Cup Margarine, melted 1 Cup Dark Molasses 1/2 Teaspoon Ginger 1/2 Teaspoon Cloves 1 Teaspoon Cinnamon 1 Teaspoon Baking Soda 1/2 Cup Boiling Water 1 Large Egg 3 Cups Flour Utensils You Need: Large Bowl Measuring Cup Rolling Pin Cookie Cutter or Glass with small mouth Directions: Dissolve baking soda in boiling water Mix all other ingredients in large bowl Add baking soda mixture and mix well Roll dough thin Cut with cookie cutter (or glass) Bake @ 325 degrees (Fahrenheit) until light brown.. watch carefully as they brown quickly. Paula sent in this side dish. She writes: This is a great side dish. It goes with anything and is fairly easy and inexpensive. Served over rice as a side to chicken, fish or beef. Potato and Eggplant Ingredients: 5 Medium to Large Potatoes , cubed 1 Medium Eggplant, peeled and cubed 2 Medium Onions, diced 2 Medium Tomatoes, diced 1 Clove Garlic, minced 1/4 Teaspoon Ginger 1/4 Cumin 1/4 Teaspoon Turmeric 1/4 Teaspoon Coriander 1/2 Cup Cilantro , chopped (Coriander is commonly called cilantro in North America) Olive Oil for sauté , Plus 4 Tablespoons Utensils You Need: Large skillet Directions: Heat olive oil in skillet Add onions, garlic and sauté for about one minute Add ginger, cumin, turmeric and coriander Mix well and continue to cook for two minutes Add potatoes and eggplant and continue cooking for 20 minutes Stirring occasionally Add tomatoes and cook for three minutes and sprinkle with cilantro AllPosters *Paula calls for both Coriander and Cilantro.
