Chicken Drumsticks And Sweet Potato Wedges

This is yet another chicken dish…. But it is an inexpensive meal. You mentioned you would be looking for cheap meal ideas. Sweet potatoes are a healthier alternative to white potatoes.

Chicken Drumsticks & Sweet Potato Wedges





Ingredients:
  1. 1 Cup Balsamic Vinegar
  2. 10-12 Chicken Drumsticks
  3. 2 -3 Sweet Potatoes (washed and sliced into wedges)
  4. 3/4 Cup Honey
  5. 3/4 Cup Brown Sugar
  6. 1/2 Cup Low Sodium Soy sauce
  7. 6-8 Sprigs Rosemary
  8. 2 Cloves Garlic (minced)
  9. 1/4 Cup Fresh Parsley
  10. 1/4 Cup Olive Oil

You will need:
  1. Baking Sheet
  2. Baking Dish (9 x 12)
  3. Pastry brush
  4. 1 Large Bowl
  5. 1 Medium Bowl
Variations:
  1. Various chicken pieces
  2. Leave off spices you don’t like
  3. Add spices you like
Directions:
  1. Combine balsamic vinegar, honey, brown sugar, soy sauce, rosemary and garlic in large bowl.
  2. Mix until well blended and sugar is dissolved
  3. Divide into two portions
  4. Place chicken in one bowl of mixture, turn to coat chicken and refrigerate for two hours
  5. Reserve the remaining mixture for use on the potatoes
  6. Place potato wedges in baking dish and drizzle with olive oil
  7. Heat oven to 400º degrees Fahrenheit
  8. Bake potatoes for 30 minutes, turning them once
  9. Take potatoes out of oven and brush with marinate you reserved
  10. Add parsley and turn to coat
  11. Place back in the oven and cook for another 30 minutes
  12. Place chicken on baking sheet and cook for 40 minutes, turning once

Sweet Potatoes are YUMMY! And this is a very simple recipe (no Paula, not a one but a two!). It is simply another way to make chicken, (love the addition of the honey as I always do), and sprinkling with olive oil instead of oil is just that much better.
