Apple, Honey and Cinnamon Chicken
This one arrived just in time for the Jewish New Year, when we like to add honey to our food, to signify the hope that the coming year will be sweet and full of blessings. Paula got a bit carried away in this one, cause she was excited that it seemed fairly simple. She writes:

Easy great chicken. Only one caveat. We don't like chicken breasts alone (though they are healthy), and you can use this recipe for a whole chicken, or chicken wings or whatever you like. And Go easy on the cinnamon.
Ha! Less than 10 ingredients. This dish is fairly inexpensive and easy to make.
Apple, Honey and Cinnamon Chicken
Ingredients:
- 1 Pound Chicken Tenders ( Or Breasts)
- 2 Tablespoons Margarine
- 1 Tablespoon Cinnamon
- 1 Teaspoon Thyme
- 2 Large Shallots (peeled and sliced)
- 2 Granny Smith Apples (or any tart apple, peeled, cored and sliced)
- 2 Teaspoons Honey
- 2 Tablespoons cooking Sherry
- 1 Small sauce pan
- 1 Baking sheet or casserole dish
- Melt margarine in saucepan over low heat
- Add Shallots and cook for five minutes
- Add cooking sherry and honey. Cook until honey becomes liquefied (thin)
- Add thyme and apples
- Cook until apples become tender ( about 7 minutes)
- Place chicken on baking sheet
- Pour apple mixture over chicken
- Cook for 30 minutes
